Trade Lead Description:
Tasty cheese obtained from heat-treated full cream sheep’s milk, produced by an italian dairy farm. The interior is white/light straw yellow, with compact texture and sparse small eyes. The wheel has the shape of two truncated cones placed base to base, the rind is grooved and of brown colour. A special maturing process gives Durgali its distinctive piquant taste, which sets it apart from other mature pecorino cheeses, harking back to the traditional aromas of the Sardinian cheeses made on the farm by the old master cheese-makers. It is excellent both as a table cheese and grated.
